Pickled cauliflower
Ingredients/Components
- salt - 1 tsp
- brown sugar - 1/2 c
- water - 1 c
- celery seed - 1/4 tsp
- mustard seed - 1 Tbsp
- head cauliflower - 1 item
- dried tarragon - 1/2 tsp
- ground mace - 1/4 tsp
- Place in a bowl and sprinkle with salt
How to make pickled cauliflower:
Break cauliflower into florets. Place in a bowl and sprinkle with salt. Cover and let stand 2 hours. After 2 hours, rinse cauliflower and dry well.Syrup:1 c. white vinegar1 c. water1/2 c. brown sugar1/4 tsp. ground mace1 Tbsp. mustard seed1/2 tsp. dried tarragon1/4 tsp. celery seed Mix all ingredients in saucepan.Bring to a boil, simmer 2 minutes and add cauliflower. Return to boil and remove from heat at once. Cool.
Chill several hours and serve cold.
Will keep up to 2 weeks in the refrigerator.
