  • cider vinegar - 3/4 c
  • ground cinnamon - 1/2 tsp
  • ground ginger - 1 tsp
  • bay leaf - 1 item
  • ground allspice - 1/4 tsp
  • white vinegar - 3/4 c
  • ground cardamon - 1/4 tsp
  • mace - 1/8 tsp
  • blackberries

How to make pickled blackberries:

Wash and pick over blackberries; set aside. In a small enamel or stainless steel saucepan, add remaining ingredients and bring to a boil. Remove bay leaf.

Meanwhile, place blackberries in clean, hot half-pint jars. Pour hot vinegar mixture over berries; seal and process in water bath for 5 minutes. Use these tangy berries to garnish chicken, game hens or fish. Use the vinegar for lovely salads. Makes 4 half-pint jars.
