Ingredients/Components
- or 12 lb - 3 qt
- cider vinegar - 3 c
- sugar - 2 c
- light brown sugar - 1 c
- water - 2 c
- mixed pickle spice - 2 Tbsp
- 1-inch pieces stick cinnamon - 2 item
- salt - 2 Tbsp
How to make pickled beets:
Wash and remove leaves from beets. Place in a large kettle of water. Bring to a boil and cook until skins will slip off when held in cold water and gently twist with fingers. Rinse lightly and drain in a colander.In a large kettle, mix remaining ingredients and bring to a boil. Cover and boil 5 minutes. Add drained cooked beets. Cover and boil 8 to 10 minutes. Spoon beets into hot sterile glass jars; pour hot vinegar mixture over beets. Seal at once. Let stand a month or longer before using. Makes 3 quarts.
