Ingredients/Components
- salt - 1/4 c
- water
- vinegar
- firmly packed brown sugar - 2 c
- dry mustard - 1 tsp
- celery seed - 1 tsp
- chopped cabbage - 1 qt
- turmeric - 1 tsp
- chopped green tomatoes - 1 qt
- large chopped onions - 2 item
- sweet green peppers, chopped - 2 item
- sweet red peppers, chopped - 2 item
How to make piccalilli:
Mix together cabbage, tomatoes, peppers and onions. Mix with salt and let stand overnight. Next morning, drain and press to remove all liquid possible.Boil vinegar, water, sugar and spices 5 minutes. Add vegetable mixture and bring to a boil again. Pour into pint jars; leave 1/2-inch headspace. Put on lids and rings; tighten. Process in boiling water bath for 10 minutes. Yields 6 pints.
