Perfect divinity

Ingredients/Components

• sugar - 2 c
• vanilla - 1 tsp
• salt - 1/4 tsp
• egg whites - 2 item
• chopped nuts optional - 1/2 c
• hot water - 1/2 c
• white corn syrup - 1/2 c

How to make perfect divinity:

Butter sides of 2-quart saucepan. In it combine sugar, corn syrup, hot water and salt. Cook and stir until sugar dissolves and mixture comes to boiling. Cook to hard ball stage without stirring (strings form from spoon). Remove from heat. Immediately beat egg whites until stiff. Pour hot syrup slowly over stiffly-beaten egg whites, beating constantly at high speed with electric beater (about 5 minutes). Add vanilla; continue beating until mixture forms soft peaks and begins to lose its gloss. Add chopped nuts. Drop divinity from teaspoon, pushing off with second spoon on cookie sheet covered with waxed paper.
