  • half and half - 1/2 c

  • heavy cream - 2 c
  • all-purpose flour
  • large eggs - 4 item
  • unsweetened cocoa powder - 1 c
  • box confectioners sugar - 1 item
  • semi-sweet chocolate pieces
  • white baking chocolate, chopped

How to make perfect chocolate cake:

Filling:8 oz. white baking chocolate, chopped2 c. heavy cream Frosting:12 oz. semi-sweet chocolate pieces1/2 c. half and half1 c. butter1 box confectioners sugar Make cake: Preheat oven to 350°. Grease pans and flour three 9-inch pans. In medium bowl, gradually stir boiling water into cocoa until blended. Set aside to cool completely. On sheet of waxed paper, combine flour, baking soda, baking powder and salt. Set aside. In large bowl of electric mixer, at high speed, beat butter with sugar until light and fluffy; add vanilla. Add eggs, one at a time, beating well after each. Beat in flour mixture (in fourths) alternately with cocoa mixture (in thirds), beginning and ending with flour and beating each addition just until blended. Pour batter into prepared pans. Bake for 25 minutes or until done. Cool layers in pans for 10 minutes. Remove and cool on wire racks.

Make filling: In top of double boiler, placed over hot, not boiling, water, combine white chocolate with 1/4 cup heavy cream. Heat, stirring, until chocolate melts and is smooth. Remove from heat; pour into large bowl of electric mixer. Stir in remaining heavy cream; refrigerate until very cold. At high speed, beat filling until stiff. Spread between cooled cake layers.

Make frosting: In medium saucepan, over medium heat, combine chocolate pieces, half and half and butter. Cook, stirring, until smooth. Transfer mixture to large mixing bowl. With portable electric mixer at high speed, beat in confectioners sugar.
