  • baking soda - 2 tsp
  • baking powder - 1/2 tsp
  • salt - 1/2 tsp
  • butter, softened - 1 c
  • sugar
  • eggs - 5 item
  • vanilla
  • pkg
  • light cream - 1/2 c
  • butter - 1 c
  • unsifted confectioners sugar
  • heavy cream, chilled

How to make perfect chocolate cake:

Frosting:1 (6 oz.) pkg. semi-sweet chocolate pieces1/2 c. light cream1 c. butter2 1/2 c. unsifted confectioners sugar Filling:1 c. heavy cream, chilled1/4 c. unsifted confectioners sugar1 tsp. vanilla Cake: In a medium size bowl, combine cocoa with boiling water, mixing with wire whisk until smooth. Cool completely. Sift flour with baking soda, baking powder and salt. Preheat oven to 350°. Grease well and lightly flour three 9-inch layer cake pans. In large bowl of electric mixer, at high speed, beat butter, sugar, eggs and vanilla until light, about 5 minutes, scraping bowl occasionally. At low speed, beat in flour mixture (in fourths) alternately with cocoa mixture (in thirds), beginning and ending with flour mixture. Do not overbeat. Divide batter evenly into prepared cake pans; smooth top. Bake for 30 minutes or until done. Cool on wire racks.

Frosting: Use medium saucepan. Combine chocolate pieces, cream and butter; stir over medium heat until smooth. With whisk, blend in sugar.

Filling: Whip cream with sugar and vanilla. Refrigerate. Assemble cake.
