Peppernuts
Ingredients/Components
- cinnamon
- salt - 1 tsp
- butter - 1 c
- baking powder
- dark brown sugar - 1 c
- ginger - 1 tsp
- Crisco - 1 c
- white sugar - 1 c
- dark Karo syrup - 2 c
- black pepper - 1/4 tsp
- light Karo syrup - 2 c
- cloves ground - 1/2 tsp
How to make peppernuts:
Heat syrup, sugar, butter and Crisco mixture, bringing mixture to a boil. Cool mixture to warm.Sift salt, baking powder and spices into flour. Add to warm syrup mixture.
Add enough flour to form a stiff dough. Knead on bread board adding more flour as needed. Keeping dough warm, roll part of it into cigar shape strip and cut to 1/2-inch thickness. Roll into ball. Place on greased cookie sheet and bake at 375° about 7 minutes on lower rack until puffed up. Then 6 minutes on upper rack until bottoms are medium brown color. Will harden when cool.
