Peppercorn burgers
Ingredients/Components
- sour cream - 1/2 c
- salt - 1/2 tsp
- butter - 2 Tbsp
- whipping cream - 1 c
- egg, beaten - 1 item
- soy sauce - 1/2 Tbsp
- soft bread crumbs - 1/2 c
- ground meat
- broth - 1/2 c
- brandy optional - 1 Tbsp
- green peppercorns, drained - 1 Tbsp
- Sauce: pan drippings
How to make peppercorn burgers:
Sauce: pan drippings1/2 c. broth1 c. whipping cream1/2 Tbsp. soy sauce1 Tbsp. green peppercorns, drained1 Tbsp. brandy (optional) Combine ground meat, bread crumbs and sour cream in a large bowl. Crush drained peppercorns and mix to a paste with salt. Add to meat mixture with beaten egg. Shape meat mixture into patties, 4 large or 8 small. Fry in butter over medium heat, turning once, to a crispy brown with a juicy center. Keep warm.Prepare sauce: Dissolve pan drippings in broth; strain. Add whipping cream to strained broth. Bring to a boil; add soy sauce, green whole peppercorns and brandy, if used. Remove patties to warm serving plate. Pour sauce over patties.
