Pepper steak with rice
Ingredients/Components
- hot cooked rice - 3 c
- lean beef round steak, cut 1/2-inch thick - 1 lb
- paprika - 1 Tbsp
- butter or margarine - 2 Tbsp
- cloves garlic, crushed - 2 item
- beef broth
- sliced green onions tops also - 1 c
- green peppers, cut in strips - 2 item
- cornstarch - 2 Tbsp
- water - 1/4 c
- soy sauce - 1/4 c
How to make pepper steak with rice:
While rice is cooking, pound steak to 1/4-inch thickness; cut into 1/4-inch strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients. Using large skillet, brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes. Stir in onions and green peppers; cover and cook 5 minutes. Blend cornstarch, soy sauce and water. Stir into meat mixture. Cook, stirring, until clear and thickened (about 2 minutes). Add tomatoes and stir gently.
