Ingredients/Components

  • sugar - 4 c
  • salt - 1 tsp
  • water
  • vinegar - 3 c
  • chopped celery - 2 3
  • medium onions - 10 item
  • green peppers - 12 item
  • red peppers - 12 item

How to make pepper relish:

Grind peppers, onions and celery and place in a crock and cover with boiling water to scald. Let stand in water for 4 minutes. Drain this water off and pour peppers into a large heavy cooking container. Add the remainder of the ingredients.

When the mixture begins to boil, taste. If mixture is not sweet enough, add more sugar. If it gets too dry while cooking, add more vinegar and water. The relish should be juicy for a better flavor. Boil for 20 minutes and seal in hot, clean pint jars.
