Pennsylvania pot roast
Ingredients/Components
- chuck roast - 1 (3
- salt - 2 tsp
- pepper - 1/4 tsp
- paprika - 1 tsp
- flour - 3 Tbsp
- diced bacon - 1/2 lb
- sliced sweet gherkins - 1 c
- large chopped onion - 1 item
- crushed clove garlic - 1 item
- water - 1 c
- can tomato sauce - 1 oz
- sour cream - 1/2 c
How to make pennsylvania pot roast:
Rub roast with salt, pepper, paprika and flour. Cook bacon until crisp; drain on absorbent paper, crumble. Brown roast in baking pan in 3 tablespoons bacon fat. Add gherkins, onion, garlic, water and tomato sauce. Bring to a boil; cover and simmer for 2 1/2 hours until tender. Blend sour cream and pan gravy; heat. Stir in bacon bits and serve with roast.
