  • chuck roast - 1 (3
  • salt - 2 tsp
  • pepper - 1/4 tsp
  • paprika - 1 tsp
  • flour - 3 Tbsp
  • diced bacon - 1/2 lb
  • sliced sweet gherkins - 1 c
  • large chopped onion - 1 item
  • crushed clove garlic - 1 item
  • water - 1 c
  • can tomato sauce - 1 oz
  • sour cream - 1/2 c

How to make pennsylvania pot roast:

Rub roast with salt, pepper, paprika and flour. Cook bacon until crisp; drain on absorbent paper, crumble. Brown roast in baking pan in 3 tablespoons bacon fat. Add gherkins, onion, garlic, water and tomato sauce. Bring to a boil; cover and simmer for 2 1/2 hours until tender. Blend sour cream and pan gravy; heat. Stir in bacon bits and serve with roast. Serves 6.
