Ingredients/Components
- medium potatoes, boiled - 8 item
- vinegar - 3/4 c
- water - 1/2 c
- sugar - 3/4 c
- salt - 1/2 tsp
- flour - 1 Tbsp
- slices bacon, fried - 8 item
- dried onion - 3/4 c
How to make peg's potato salad:
Cook, cool and peel potatoes. Slice 1/4-inch thick. Place in large bowl. Combine vinegar, sugar, water and salt. Bring to a boil. Set aside. Mix flour and 1/4 cup water. Stir into vinegar mixture and simmer until thick. Toss sauteed onion and fried bacon (crumbled) with potatoes. Toss with cooked dressing. Serve hot or cold.Recipe categories: Low sodium, Low fat.
