Pecan crunch
Ingredients/Components
- sugar
- salt - 1 tsp
- water - 1/2 c
- baking soda - 1 tsp
- cider vinegar - 1 Tbsp
- butter or oleo
- about 8 oz - 2 c
- milk chocolate - 4 oz
How to make pecan crunch:
Coarsely chop 1 cup of pecans; finely chop other pecans. Reserve 1/2 cup for topping. Mix coarsely chopped and 1/2 cup finely chopped pecans with baking soda. Set aside.In a heavy, 2-quart pan, combine next 5 ingredients. Set over low heat. Stir until sugar is dissolved. Cook, without stirring, to 290°. Remove from heat. Add nut-soda mixture and stir until blended.
Pour into buttered 13 x 9-inch pan. Cool candy. Melt chocolate and spread over candy. Sprinkle remaining nuts over top. When set, break into pieces. Store in tightly covered container.
