Ingredients/Components

  • sugar - 1/3 c
  • sour cream - 1 Tbsp
  • maple syrup - 1/4 c
  • Dijon mustard
  • balsamic vinegar - 1/4 c
  • 10 oz - 1 pkg
  • dried tarragon - 1/2 tsp
  • small red onion, sliced thinly - 1/2 item
  • Boston or other lettuce leaves - 1 item
  • red pears, firm, but ripe, pared - 2 item
  • pecans, toasted and coarsely chopped - 2 oz
  • Gorgonzola cheese, crumbled - 2 oz

How to make pear and gorgonzola salad:

Puree berries in blender. Strain through a sieve to remove seeds. Whisk the puree together with syrup, vinegar, mustard, tarragon, sugar and sour cream. Chill.

For salad, line 4 salad plates with lettuce leaves. Slice pears in half lengthwise; scoop out seeds and slice in wedges. Fan a pear half out on each plate. Sprinkle with pecans, cheese and red onion. Drizzle with berry vinaigrette. Serves 4.
