Pear and gorgonzola salad
Ingredients/Components
- sugar - 1/3 c
- sour cream - 1 Tbsp
- maple syrup - 1/4 c
- Dijon mustard
- balsamic vinegar - 1/4 c
- 10 oz - 1 pkg
- dried tarragon - 1/2 tsp
- small red onion, sliced thinly - 1/2 item
- Boston or other lettuce leaves - 1 item
- red pears, firm, but ripe, pared - 2 item
- pecans, toasted and coarsely chopped - 2 oz
- Gorgonzola cheese, crumbled - 2 oz
How to make pear and gorgonzola salad:
Puree berries in blender. Strain through a sieve to remove seeds. Whisk the puree together with syrup, vinegar, mustard, tarragon, sugar and sour cream. Chill.For salad, line 4 salad plates with lettuce leaves. Slice pears in half lengthwise; scoop out seeds and slice in wedges. Fan a pear half out on each plate. Sprinkle with pecans, cheese and red onion. Drizzle with berry vinaigrette. Serves 4.
