Peanut soup
Ingredients/Components
- parsley - 1 item
- large onion, chopped - 1 item
- rice, uncooked - 1/4 c
- carrots, chopped - 4 item
- raw skinned peanuts - 2 c
- liters chicken broth seasoned with salt, cumin and garlic - 2 item
- large potatoes, cut up raw - 4 item
- pear fresh or frozen - 1 c
How to make peanut soup:
Grind the peanuts in a blender. With a little oil, saute the peanuts in a skillet, but not until brown. Put the peanuts, broth, onion, potatoes and carrots in a large pot. Boil for 30 minutes. Add rice and peas and cook for 15 minutes more. Serve hot with crushed parsley and French fried potatoes on top. Serves 8.Recipe categories: Soups & stews, Bisques/cream soups, Nigerian.
