Peanut soup
Ingredients/Components
- butter - 1 Tbsp
- raisins - 1/2 c
- peanut butter - 1/2 c
- honey - 1 Tbsp
- chopped onion - 1 c
- salt and pepper to taste - 1 item
- chicken stock - 2 c
- dash of cinnamon - 1 item
- dash of cloves - 1 item
- milk or buttermilk
- fresh ginger root - 2 Tbsp
- chopped raw peanuts - 1 c
How to make peanut soup:
Saute onion, ginger, salt and pepper in butter until onion becomes clear. Add cinnamon, cloves and peanuts and saute 5 to 10 minutes. Stir in chicken stock, raisins, honey and peanut butter. Mix thoroughly. Cover and simmer over low heat for one hour. Add milk and serve when soup is hot. Makes 10 small servings.Recipe categories: Soups & stews, Bisques/cream soups, Nigerian.
