Peanut butter pie
Ingredients/Components
- sugar - 2/3 c
- vanilla - 1/4 tsp
- salt - 1/4 tsp
- butter - 2 Tbsp
- cornstarch - 1/4 c
- powdered sugar - 1 c
- peanut butter - 1/2 c
- large egg yolks, beaten - 3 item
- scalded milk - 2 c
- baked pie shell - 1 item
- egg whites for meringue - 3 item
How to make peanut butter pie:
Combine powdered sugar and peanut butter. Blend until the appearance of biscuit mix. Spread half of this mixture on pie shell. Combine cornstarch, sugar and salt; add scalded milk and mix well. Pour small amount over beaten egg yolks; mix well, then return to milk mixture. Cook in top of double boiler until mixture thickens. Add butter and vanilla, then pour into prepared pie shell.Top with meringue made from 3 beaten egg whites. Sprinkle remainder of peanut butter mixture over meringue. Bake at 325° until meringue is brown.
