Peanut butter pie



  • sugar - 2/3 c
  • vanilla - 1/4 tsp
  • salt - 1/4 tsp
  • butter - 2 Tbsp
  • cornstarch - 1/4 c
  • powdered sugar - 1 c
  • peanut butter - 1/2 c
  • large egg yolks, beaten - 3 item
  • scalded milk - 2 c
  • baked pie shell - 1 item
  • egg whites for meringue - 3 item

How to make peanut butter pie:

Combine powdered sugar and peanut butter. Blend until the appearance of biscuit mix. Spread half of this mixture on pie shell. Combine cornstarch, sugar and salt; add scalded milk and mix well. Pour small amount over beaten egg yolks; mix well, then return to milk mixture. Cook in top of double boiler until mixture thickens. Add butter and vanilla, then pour into prepared pie shell.

Top with meringue made from 3 beaten egg whites. Sprinkle remainder of peanut butter mixture over meringue. Bake at 325° until meringue is brown.
