Peanut butter filled fudge cupcakes
Ingredients/Components
- eggs - 2 item
- vanilla - 1 tsp
- pkg - 1 oz
- packed brown sugar - 1 c
- milk - 1/2 c
- salt - 1/2 tsp
- flour - 1 c
- baking soda - 3/4 tsp
- shortening - 1/3 c
- unsweetened cocoa powder - 1/3 c
- honey - 1 Tbsp
- chunky peanut butter - 1/4 c
How to make peanut butter filled fudge cupcakes:
In medium mixing bowl, stir together flour, cocoa, soda and salt. In large mixing bowl, beat shortening about 30 seconds. Add brown sugar and vanilla; beat well. Add eggs, one at a time, beating well after each. Add dry ingredients alternately with the 1/2 cup milk, beating after each addition.In a medium bowl, combine cream cheese, peanut butter, honey and 1 tablespoon milk. Beat well. Place scant 2 tablespoons batter in paper bake cup-lined muffin cups. Spoon 1 rounded teaspoon cream cheese mixture into center of each. Fill cups halfway full with remaining batter (about 1 tablespoon each). Bake in 375° oven for 20 minutes or until done. Cool on rack. Makes 18.
