  • sugar - 2 c
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • butter - 1 Tbsp
  • water - 1/2 c
  • baking soda - 1 Tbsp
  • light corn syrup - 1 c
  • raw peanuts 1 lb - 2 c

How to make peanut brittle:

Combine in iron skillet the corn syrup, sugar and water. Stir until sugar dissolves and cooks to 234° or soft ball on candy thermometer. Add raw peanuts and boil to 310° or brittle stage. Remove from heat and add baking soda, vanilla, salt and butter. (These should be mixed in a cup before you begin and mix up so can be added all at once.) Cool and break into pieces.
