Peaches and cream salad
Ingredients/Components
- pkg - 1 oz
- cold water - 3/4 c
- boiling water - 1 c
- whipping cream - 1 c
- plus 2 Tbsp - 1/2 c
- unflavored gelatin - 1 env
- half-and-half cream - 1/2 c
- peaches, sliced - 3 c
- small banana, sliced - 1 item
- peaches, pureed - 1 c
How to make peaches and cream salad:
Dissolve peach gelatin in boiling water; stir until dissolved. Add 3/4 cup cold water and mix well. Chill until the consistency of an unbeaten egg white. Stir in sliced peaches and banana. Pour into a lightly oiled 8-cup mold. Chill until set. Soften gelatin in 3 tablespoons cold water. Scald half-and-half cream and stir into gelatin mixture. Beat cream cheese until smooth. Add whipping cream, sugar, and pureed peaches; mix well. Add to gelatin mixture and stir well. Pour over peach and banana layer. Chill at least 8 hours, or until firm.
