Peach marmalade
Ingredients/Components
- ground allspice - 1 Tbsp
- large oranges - 3 item
- fresh peaches - 8 lb
- large lemons - 4 item
- sugar 13 1/2 c - 6 lb
How to make peach marmalade:
Peel peaches; remove pits and knife chop finely. Cut oranges and lemons in quarters and remove seeds. Put through coarse blade of food chopper. (Should be 3 quarts of peaches and 6 cups of oranges and lemons.) Place peaches and ground fruit in large pan and add sugar and spice. Over moderate heat, bring slowly to a boil, stirring often. Boil gently for 45 minutes, stirring often, until fruit is translucent and the mixture sheets from a metal spoon. Remove from heat. Skim off foam and put in jars at once.
