Ingredients/Components
- fresh peaches, peeled, pitted and cut into 1/2-inch slices - 4 lb
- plus 2 tsp - 2/3 c
- butter - 2 Tbsp
- all-purpose flour - 2 c
- baking powder - 1 Tbsp
- salt - 1 tsp
- vegetable shortening - 1/4 c
- heavy cream - 1 c
- vanilla ice cream - 1 item
How to make peach cobbler:
In a large bowl, combine the peaches with 2/3 cup sugar; toss well. Spoon the fruit into a shallow 10-cup baking dish and dot with butter.Preheat oven to 400°. Sift flour, baking powder, salt and the remaining 2 teaspoons sugar in a mixing bowl and cut in the shortening with a pastry cutter or 2 knives until the mixture resembles coarse meal. Add the cream and stir until the dough forms a ball. Turn out the dough on a floured surface and roll out 1/4-inch thick; trim as necessary to fit the baking dish. Place the dough over the fruit; crimp the edges and bake until the pastry is golden brown, about 30 minutes. Let the cobbler cool about 15 minutes and serve warm topped with vanilla ice cream. Yield: 6 to 8 servings.
