Peach cobbler
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/4 tsp
- vanilla - 1/2 tsp
- flour - 1 c
- butter - 3 Tbsp
- cornstarch - 1 Tbsp
- nutmeg - 1/4 tsp
- baking powder
- dash of salt - 1 item
- fresh lemon juice - 2 tsp
- light cream or half and half - 1/2 c
- butter, melted and cooled - 1 Tbsp
- sliced fresh peaches about 6 medium - 4 c
How to make peach cobbler:
Combine 1/2 cup sugar, cornstarch and cinnamon. Stir in peaches and lemon juice. Bring to boil over medium heat, stirring frequently. Beat and stir 1 minute. Pour into unbuttered, 2-quart casserole. Keep hot in 400° oven.Combine flour, 2 tablespoons sugar, nutmeg, baking powder and salt. Cut in 3 tablespoons butter until mixture resembles crumbs. Stir in cream and vanilla until all ingredients are moistened. Drop by spoonfuls onto peach mixture. Brush with melted butter. Sprinkle with 1/2 tablespoon sugar.
Bake, uncovered, until golden brown, 25 to 30 minutes. Serve warm, topped with cream or vanilla ice cream. Makes 6 servings.
