Pasta with fresh tomatoes



  • sugar - 1 tsp
  • salt - 1/2 tsp
  • vinegar - 1 tsp
  • grated Parmesan cheese - 1 item
  • olive oil - 3 Tbsp
  • tomato paste - 1 Tbsp
  • cooked pasta - 8 oz
  • red pepper - 1/4 tsp
  • large onion, sliced and separated into rings - 1 item
  • fresh chopped oregano - 2 Tbsp
  • large ripe tomatoes, peeled, seeded, chopped - 4 item
  • red or green sweet peppers, cut into strips - 2 item

How to make pasta with fresh tomatoes:

Drain tomatoes in colander. Saute onions, peppers, oregano, salt and pepper in olive oil until crisp-tender. Stir in tomato paste, sugar, vinegar and tomatoes. Heat through but do not boil. Serve over hot pasta. Top with Parmesan cheese. Makes 4 servings.
