Pasta with chicken and broccoli
Ingredients/Components
- chopped fresh parsley - 3/4 c
- black pepper - 1 item
- spaghetti - 1/2 lb
- safflower oil - 1/4 c
- small cloves garlic, minced - 6 item
- whole chicken breasts, boned, skinned, halved, cut into strips - 3 item
How to make pasta with chicken and broccoli:
Boil spaghetti until al dente; drain. Heat oil in skillet, add garlic and stir 1 minute. Add broccoli; saute for 2 minutes or until tender-crisp, then transfer to a heated dish. Add chicken to skillet and saute until no longer pink, about 5 minutes. Toss pasta with broccoli and chicken. Garnish with parsley, sprinkle with pepper and serve. Serves 6.Serve with potato soup, carrot-raisin salad dressed just with lemon juice and an oatmeal cookie.
