Ingredients/Components

  • red wine vinegar - 1 Tbsp
  • oregano - 1 tsp
  • basil - 1 tsp
  • chopped black olives - 1/4 c
  • olive oil - 1 Tbsp
  • capers - 1 Tbsp
  • hot sauce - 1 item
  • fresh chopped parsley - 3 Tbsp
  • chopped garlic - 1 Tbsp
  • sun-dried tomatoes - 1 c
  • anchovy paste - 1 Tbsp

How to make pasta alla puttanesca:

Soak sun-dried tomatoes in hot water until softened, then cut into bite size pieces. Saute garlic in the olive oil in a large saucepan. Add the crushed tomatoes and all other ingredients, except the parsley. Simmer about 15 minutes to blend the flavors. Add the parsley; simmer a few minutes longer. Serve over fresh cooked pasta (penne and rotelli are recommended).

Note: Add hot sauce to taste.
