Ingredients/Components

  • butter - 4 Tbsp
  • chopped celery
  • sage - 2 Tbsp
  • salt and pepper - 1 item
  • minced onion - 5 Tbsp
  • chopped parsley - 4 Tbsp
  • eggs, slightly beaten - 2 item
  • poultry seasoning - 2 Tbsp
  • rice or 3 qt - 4 c
  • oysters and the liquid - 2 doz
  • turkey stock and cut up giblets - 1 c

How to make oyster dressing:

Saute onion and celery in butter. Add bread or rice and all the seasonings. Add oysters, stock and giblets. Mix and heat thoroughly, then add eggs and mix well. Makes enough to stuff a 10-pound turkey.

My mother used to make this for every Christmas dinner. I still make it, plus I always save a few oysters to eat raw before the meal.
