  • butter - 1 Tbsp
  • Worcestershire sauce - 1 Tbsp
  • bay leaf - 1 item
  • sprigs parsley - 2 item
  • peppercorns - 6 item
  • chopped tomatoes - 1/2 c
  • large onion, diced - 1 item
  • stalk celery - 1 item
  • carrot - 1 item
  • stock - 3 pt
  • claret - 1 c
  • sprig thyme - 1 item
  • ox tail - 1 item

How to make ox tail soup:

Wash the ox tail well and split in small joints. Melt the butter in a saucepan; add pieces of tail and when beginning to brown, add the chopped onion. Fry until the onion is a deep gold, then add stock, carrot and celery (cut in thin slices), thyme, parsley and bay leaf (tied securely together), finely chopped tomatoes and claret. Season with Worcestershire sauce, peppercorns and salt. Let it boil. Serve.
