Ingredients/Components
- salt - 1 item
- butter - 1 Tbsp
- Worcestershire sauce - 1 Tbsp
- bay leaf - 1 item
- sprigs parsley - 2 item
- peppercorns - 6 item
- chopped tomatoes - 1/2 c
- large onion, diced - 1 item
- stalk celery - 1 item
- carrot - 1 item
- stock - 3 pt
- claret - 1 c
- sprig thyme - 1 item
- ox tail - 1 item
How to make ox tail soup:
Wash the ox tail well and split in small joints. Melt the butter in a saucepan; add pieces of tail and when beginning to brown, add the chopped onion. Fry until the onion is a deep gold, then add stock, carrot and celery (cut in thin slices), thyme, parsley and bay leaf (tied securely together), finely chopped tomatoes and claret.
