Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- salt - 1 tsp
- flour - 2 c
- brown sugar
- water - 1 c
- coconut - 1/2 c
- baking powder - 2 tsp
- cooking oil - 3/4 c
- pecans, chopped - 1/2 c
- instant Jell-O vanilla pudding mix - 2 pkg
How to make overnight coffee cake:
Topping:1 c. brown sugar1/2 c. coconut1/2 c. pecans, chopped1 tsp. cinnamon Mix all cake ingredients in bowl; blend on low 30 seconds, then on medium speed for 2 minutes. Put half the batter in greased, floured 9 x 13-inch pan. Mix topping ingredients; sprinkle half the topping over batter. Add remaining batter and top with remaining topping. Bake 40 to 60 minutes at 325°. Can be prepared ahead and refrigerated overnight to bake in the morning. Serve warm or cold.Recipe categories: Breads, Breakfast, Coffee cakes.
