Ingredients/Components

  • pkg - 10 oz
  • dry mustard - 1 tsp
  • 5 oz
  • skim milk - 1 c
  • salt and pepper to taste - 1 item
  • Mozzarella cheese - 1 c
  • Swiss cheese - 1 c
  • Cheddar cheese - 1 c
  • to 8 slices bread, crusts removed - 6 item
  • large eggs may need more if eggs are small; may use equivalent egg substitute - 8 item

How to make overnight breakfast casserole:

Butter (or spray) a 9 x 13-inch cake pan. Line bottom of pan with bread. Brown sausage. Drain to remove as much fat as possible. Beat eggs, milk, mustard, salt and pepper together. Spread sausage evenly over bread slices. Top with mushroom pieces. Layer cheeses over mushrooms. Pour egg mixture over everything. Cover and refrigerate overnight. Bake at 350° (325° for glass pan) for 45 minutes or until knife inserted into center comes out clean.

May add onions, green or red peppers, black olives or anything you would add to an omelette. Just saute vegetables with sausage.
