Ingredients/Components
- salt - 1/4 tsp
- pepper - 1/4 tsp
- grated Parmesan cheese - 2 Tbsp
- fine dry bread crumbs - 1/3 c
- mayonnaise - 1/4 c
How to make oven fried eggplant:
Combine bread crumbs, cheese, salt and pepper. Peel eggplant, slice 1/4-inch thick. Brush both sides of eggplant with mayonnaise. Roll in crumb mixture. Bake on a lightly greased baking sheet at 400° for 12 minutes or until brown.Recipe categories: Side dish, Vegetables, Italian.
