Ingredients/Components
- orzo - 1 c
- cut up broccoli flowerets 1 bunch - 4 c
- coarsely chopped, drained, marinated artichoke hearts - 1/2 c
- can ripe olives, drained and coarsely chopped - 1 oz
- medium tomatoes, chopped - 2 item
- scallions, chopped - 2 item
- olive oil - 2 Tbsp
- red wine vinegar - 3 Tbsp
- garlic salt - 1/4 tsp
- pepper - 1/4 tsp
- diced cooked chicken - 1 c
- mixed salad greens - 6 7
How to make orzo and vegetables:
In a large pot of boiling salted water, cook orzo over medium-high heat 6 minutes. Add broccoli to pot and cook 4 to 5 minutes longer, until broccoli and orzo are tender. Drain well. Add artichoke hearts, olives, tomatoes, scallions, oil, vinegar, garlic salt, pepper and chicken to pot, tossing well.
