Oriental chicken pasta salad
Ingredients/Components
- vegetable oil - 2 Tbsp
- honey - 1 Tbsp
- rice vinegar - 3 Tbsp
- dry sherry - 1/3 c
- ginger root, minced - 3 Tbsp
- cilantro - 1/3 c
- can water chestnuts, sliced - 8 oz
- tamari soy sauce - 1/3 c
- hot chili oil - 1/2 tsp
- sesame oil, divided - 4 Tbsp
- bunch scallions, sliced - 1 item
- sesame spaghetti - 1 lb
- cooked chicken, cubed in 1/2-inch pieces - 3 4
- medium cucumber, peeled and cut into strips - 1 item
How to make oriental chicken pasta salad:
Toss one half of sesame oil with cold, cooked spaghetti. Stir in chicken, scallions, cucumber, water chestnuts and chopped cilantro (no stems). Set aside.Combine sesame oil, vegetable oil, chili oil, vinegar, tamari, ginger, honey and sherry into a small bowl. Pour dressing over pasta and marinate several hours. Bring to room temperature before serving. Yields 6 servings.
