Ingredients/Components

  • oil - 4 Tbsp
  • boneless, skinless chicken breasts
  • chicken broth - 2 c
  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • ground ginger - 1 tsp
  • cornstarch - 8 tsp
  • water - 3 Tbsp
  • sliced carrots
  • broccoli florets
  • hot, cooked rice - 1 item

How to make oriental chicken:

Cut chicken in 1/2-inch strips. Heat 2 tablespoons oil in a large skillet. Stir-fry chicken 3 to 4 minutes. Add chicken broth, salt, pepper and ginger. Simmer for 5 minutes. Heat 2 tablespoons oil in a separate skillet and stir-fry vegetables for 5 minutes. Blend cornstarch with water and stir into chicken. Add cooked vegetables and serve over rice.
