Oriental asparagus salad
Ingredients/Components
- sugar - 1 tsp
- salt - 1 item
- water - 1 item
- red wine vinegar - 2 Tbsp
- sliced green onions - 1/4 c
- soy sauce - 1 Tbsp
- toasted sesame seed - 2 Tbsp
- lettuce optional - 1 item
- asparagus, trimmed and cut diagonally in 1 1/2-inch pieces* - 1 lb
- can bean sprouts, drained and soaked in cold water for 1 hour, or 2 c - 1 oz
- Oriental Dressing recipe follows - 1 item
- In bowl, while warm, combine with well drained bean sprouts
How to make oriental asparagus salad:
Cook asparagus in boiling water to cover for 8 to 10 minutes or until crisp-tender; drain. In bowl, while warm, combine with well drained bean sprouts. Add dressing and toss lightly. Chill well. Spoon into lettuce lined bowl. Makes 4 servings. Per serving: 162 calories, 6 g protein, 10 g carbohydrate, 13 g fat and 0 mg cholesterol.*Note: One (10 ounce) package frozen cut asparagus, cooked according to package directions, can be substituted.Oriental Dressing:1/4 c. oil2 Tbsp. red wine vinegar1 Tbsp. soy sauce1 tsp. sugar1/4 c. sliced green onions2 Tbsp. toasted sesame seed Mix well.
