Ingredients/Components

  • sugar
  • salt - 1/4 tsp
  • baking powder - 1 tsp
  • cake flour
  • stiffly beaten egg whites - 4 item
  • orange juice - 1/2 c
  • well beaten egg yolks - 4 item

How to make orange sponge cake:

Beat yolks until thick and lemon colored; add sugar gradually and 2 tablespoons of juice. Blend well. Add remaining juice alternately with sifted dry ingredients, mixing until smooth after each addition. Fold in stiffly beaten egg whites. Bake in 9-inch ungreased tube pan in slow oven, 325°, for 1 hour. Invert pan to cool. Cover cake with boiled frosting and sprinkle grated rind of 1 orange over frosting before it sets.
