Orange oatmeal cookies

Ingredients/Components

• eggs - 2 item
• salt - 3/4 tsp
• chopped nuts - 1/2 c
• flour - 2 c
• brown sugar - 2 c
• soda - 1 tsp
• shortening - 1 c
• raisins - 1 c
• oatmeal - 2 c
• orange juice - 3 Tbsp
• grated orange rind - 2 Tbsp

How to make orange oatmeal cookies:

Cream shortening and sugar. Beat in eggs until light and fluffy. Add orange rind and juice. Sift together the flour, soda and salt. Add creamed mixture. Add oats, raisins and nuts, mixing until blended. Drop from teaspoon onto greased cookie sheet. Bake at 350° for 10 to 12 minutes. Yields 36 large cookies.
