Orange-glazed sweet potatoes
Ingredients/Components
- vanilla - 1 tsp
- butter or margarine - 3 Tbsp
- salt - 1/4 tsp
- cornstarch - 1/3 c
- firmly packed brown sugar - 1/3 c
- orange juice - 1 c
- grated orange rind - 2 Tbsp
- ginger optional - 1 tsp
How to make orange-glazed sweet potatoes:
Cook potatoes in boiling water to cover, 25 to 30 minutes or until tender; let cool. Peel and cut into 1/3-inch slices. Arrange slices in buttered casserole. Mix remaining ingredients in saucepan. Cook slowly until thickened. Remove from heat; add vanilla. Cover sweet potatoes with sauce.
