  • sugar - 2 tsp
  • salt - 1/4 tsp
  • cornstarch - 1 tsp
  • water - 1/4 c
  • ground ginger - 1/4 tsp
  • orange juice - 1/4 c
  • corn oil margarine, melted - 1 tsp
  • medium carrots, scraped and cut into diagonal slices - 5 item

How to make orange-glazed carrots:

Combine carrot slices, water and salt in a medium saucepan. Cover and cook over medium heat 15 minutes or just until tender (do not drain). Combine orange juice, sugar, cornstarch, margarine, and ginger, stirring until well blended. Pour over carrot slices in saucepan.

Continue to cook over medium heat, stirring occasionally, 8 minutes or until mixture thickens. Yields 4 servings. Serving size: 1/2 cup. (Low cholesterol recipe.)
