Ingredients/Components
- sugar - 2 c
- eggs - 5 item
- salt - 1/2 tsp
- flour - 2 c
- butter - 1 c
- cornstarch
- egg yolks - 4 item
- soda - 2 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- cream of tartar - 1/4 tsp
- lemon juice
- orange rind, grated - 3 Tbsp
- orange rind - 3 Tbsp
- Cream butter and sugar; add eggs and buttermilk
- Boil 1 minute, stirring all the time
How to make orange cake:
Mix as any other cake. Cream butter and sugar; add eggs and buttermilk. Mix flour, soda, salt and baking powder. Makes 3 (9-inch) layers. Bake at 350° or a little less until done, but not brown.Filling:1 3/4 c. sugar1/2 tsp. salt3 Tbsp. butter4 egg yolks4 1/2 Tbsp. cornstarch1 1/2 Tbsp. lemon juice3 Tbsp. orange rind Mix all but egg yolks and bring to a rolling boil. Boil 1 minute, stirring all the time. Pour some of the hot mixture into the egg yolk, stirring. Then pour this mixture back into the saucepan and boil another minute. Stir all the time. Remove from heat and add orange rind. Chill by setting in cold water. Put on all layers but not on sides. Save enough (small amount) to be poured over cake after the meringue has covered the cake.Meringue: whites of 4 eggs1/4 tsp. cream of tartar3/4 c. sugar Beat egg whites and cream of tartar; gradually beat in sugar. Beat in double boiler over water just like seven minute icing, until it will hold peaks. Cover top and sides of cake with meringue.
