Old fashioned potato salad



  • medium boiled potatoes - 3 item
  • chopped chives or parsley - 1 Tbsp
  • finely chopped green onions - 1 Tbsp
  • slices crisp bacon, chopped fine - 2 item
  • hot chicken broth - 1/2 c
  • mayonnaise - 1/3 c
  • French dressing - 1/2 c
  • cider or wine vinegar - 2 Tbsp

How to make old fashioned potato salad:

Steam or boil potatoes until done. Peel skins while still slightly warm and cut into thin slices. Place potatoes into mixing bowl. Add chives, onions, bacon, chicken broth, mayonnaise, French dressing and wine vinegar. Mix well and let stand for 30 to 40 minutes.

Do not be alarmed if mixture looks too moist. The potatoes will absorb moisture in the time they are standing and salad will become firm. Serves 4 to 6.
