  • beef middle chuck cut - 4 lb
  • onions, diced or sliced - 3 item
  • cloves garlic, minced - 4 item
  • carrot, sliced - 1 item
  • stalk celery, diced - 1 item
  • green pepper, diced - 1 item
  • bacon drippings - 3 Tbsp
  • salt - 2 Tbsp
  • paprika - 1 tsp
  • bay leaves - 4 item
  • peppercorns - 10 item
  • small dry red pepper - 1 item
  • tomato juice
  • brown sugar - 2 Tbsp

How to make old fashioned pot roast:

Heat in heavy pot and braise the meat until evenly browned on all sides. Add remaining ingredients in the order listed. Cover and simmer 2 hours. Strain gravy and thicken to taste. Slice when tender; serve with gravy. Makes 8 to 10 servings.
