Ingredients/Components
- beef middle chuck cut - 4 lb
- onions, diced or sliced - 3 item
- cloves garlic, minced - 4 item
- carrot, sliced - 1 item
- stalk celery, diced - 1 item
- green pepper, diced - 1 item
- bacon drippings - 3 Tbsp
- salt - 2 Tbsp
- paprika - 1 tsp
- bay leaves - 4 item
- peppercorns - 10 item
- small dry red pepper - 1 item
- tomato juice
- brown sugar - 2 Tbsp
How to make old fashioned pot roast:
Heat in heavy pot and braise the meat until evenly browned on all sides. Add remaining ingredients in the order listed. Cover and simmer 2 hours. Strain gravy and thicken to taste. Slice when tender; serve with gravy. Makes 8 to 10 servings.Recipe categories: Main dish, Beef, Roast beef.
