Okra fritters
Ingredients/Components
- salt - 1/2 tsp
- evaporated milk - 1/2 c
- vegetable oil - 1 item
- plain flour - 1/4 c
- cornmeal - 1/4 c
- grated Parmesan - 2 Tbsp
- chopped parsley - 3 Tbsp
- egg, lightly beaten - 1 item
- finely chopped onion - 1/2 c
- red pepper - 1/4 tsp
- fresh sliced okra * - 2 c
How to make okra fritters:
Combine first 9 ingredients; stir in okra. Pour oil to depth of 2 inches into a Dutch oven; heat to 350°. Drop mixture by tablespoonfuls into oil and cook until golden brown, turning once. Drain on paper towels. Sprinkle with salt and serve immediately. Yields 4 to 6 servings.*Two cups frozen okra, thawed, may be substituted for sliced fresh okra.
