Ingredients/Components

  • salt - 1/2 tsp
  • evaporated milk - 1/2 c
  • vegetable oil - 1 item
  • plain flour - 1/4 c
  • cornmeal - 1/4 c
  • grated Parmesan - 2 Tbsp
  • chopped parsley - 3 Tbsp
  • egg, lightly beaten - 1 item
  • finely chopped onion - 1/2 c
  • red pepper - 1/4 tsp
  • fresh sliced okra * - 2 c

How to make okra fritters:

Combine first 9 ingredients; stir in okra. Pour oil to depth of 2 inches into a Dutch oven; heat to 350°. Drop mixture by tablespoonfuls into oil and cook until golden brown, turning once. Drain on paper towels. Sprinkle with salt and serve immediately. Yields 4 to 6 servings.

*Two cups frozen okra, thawed, may be substituted for sliced fresh okra.
