Oatmeal muffins
Ingredients/Components
- cinnamon
- eggs - 2 item
- salt - 1/2 tsp
- flour - 2 c
- brown sugar - 1 c
- soda - 1 tsp
- buttermilk - 2 c
- baking powder - 2 tsp
- raisins - 1 c
- Quick Quaker oats - 2 c
- corn oil add last - 1 c
How to make oatmeal muffins:
Combine the oats and buttermilk to soften for 1/2 hour. Mix slightly beaten eggs with oatmeal and buttermilk after softening. Add to dry ingredients. Add oil last. Bake in greased muffin pans for 15 minutes at 400°. Dough will keep in refrigerator for 5 weeks. (Bake a little longer if taken from refrigerator.)Recipe categories: Breads, Quick breads, Muffins.
