- salt - 1 tsp
- flour - 1 c
- brown sugar - 1/2 c
- soda - 1/2 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- egg - 1 item
- shortening - 1/3 c
- quick-cooking oats - 1 c
How to make oatmeal muffins:
Beat egg; stir in buttermilk, brown sugar and shortening. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy. Fill greased muffin cups 2/3 full. Bake at 400° for 20 to 25 minutes. Makes 12.Recipe categories: Breads, Quick breads, Muffins.
