Ingredients/Components
- salt - 1 tsp
- flour - 1 c
- brown sugar - 1/2 c
- soda - 1/2 tsp
- baking powder - 1 tsp
- egg - 1 item
- shortening - 1/3 c
- buttermilk or sour milk - 1 c
- oatmeal or oat bran - 1 c
How to make oatmeal muffins:
Soak oatmeal in buttermilk or sour milk for 1 hour. Mix shortening, brown sugar and egg together. Sift flour, baking powder, soda and salt together. Stir mixtures into oatmeal and buttermilk. Put into muffin tins. Bake at 400° for 20 to 25 minutes. Good with a casserole and a salad.Recipe categories: Breads, Quick breads, Muffins.
