Oatmeal muffins
Ingredients/Components
- cinnamon - 2 tsp
- packed brown sugar - 1 c
- salt - 1 tsp
- buttermilk - 2 c
- eggs, beaten - 2 item
- baking powder - 2 tsp
- baking soda - 1 tsp
- all-purpose flour - 2 c
- margarine, melted - 2/3 c
- nutmeg or mace - 1/2 tsp
- dry 1 minute oats - 2 c
How to make oatmeal muffins:
Combine all dry ingredients in bowl. Make well in center. Combine eggs, buttermilk and margarine; mix well. Add to dry ingredients, stirring until moistened. Spoon into greased or papered muffin tins 2/3 full. Bake 18 to 20 minutes at 400°. Makes 1 1/2 to 2 dozen.Recipe categories: Breads, Quick breads, Muffins.
