Oatmeal caramelitas
Ingredients/Components
- packed brown sugar - 3/4 c
- salt - 1/4 tsp
- flour - 1 c
- baking soda - 1/2 tsp
- chocolate chips - 1 c
- melted butter - 3/4 c
- walnuts, chopped - 1/2 c
- light cream or evaporated milk - 5 Tbsp
- oats - 1 c
- light caramels - 8 oz
- coconut optional* - 1/2 c
How to make oatmeal caramelitas:
*Note: If using coconut, add to crumb mixture before pressing into pan.Melt caramels with cream in double boiler or microwave; set aside. Heat oven to 350°. Combine flour, oats, brown sugar, soda, salt and melted butter; mix well. Press 1/2 of mixture into 9 x 9-inch pan and bake 10 minutes. Remove from oven, sprinkle chocolate chips and nuts and pour caramel mixture over top. Sprinkle with remaining crumb mixture. Bake at 350° for 15 to 20 minutes until lightly browned. Cool 1 to 2 hours and cut into bars. For double recipe, use 13 x 9-inch pan.
