Oatmeal cake
Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 1 tsp
- chopped nuts - 1 c
- flour
- brown sugar - 1 c
- soda - 1 tsp
- boiling water
- soft butter - 3 Tbsp
- raisins - 1 c
- white sugar - 1 c
- grated coconut - 3/4 c
- beaten eggs - 2 item
- quick cooking oats - 1 c
- cube butter - 1 item
- Let stand 20 minutes or until cooled
How to make oatmeal cake:
Pour boiling water over oats. Let stand 20 minutes or until cooled. Cream butter, brown sugar and white sugar; add eggs and vanilla. Add the oatmeal mixture and cinnamon. Sift together soda and flour and add to mixture. Add raisins. Bake in 13 x 9-inch cake pan for 35 to 40 minutes or until done. Remove from oven; cool and add topping.Topping:1 c. brown sugar3 Tbsp. soft butter1/2 tsp. vanilla1 c. chopped nuts3/4 c. grated coconut Mix together all topping ingredients.
